    3-4 medium tomatoes, chopped

    1/2 medium red onion, chopped (about 1/2 cup)

    1 medium jalapeno, finely diced

    juice of 1 lime

    2 Tbsp. vinegar

    1/4 tsp. salt

    Instructions

    In a bowl, combine the tomatoes, onion, jalepeno, and cilantro. Mix together to combine. Add the lime juice, vinegar, and salt and stir.
    Enjoy right away.
    Refrigerate in an airtight container for up to one week.
