Ingredients
3 cups frozen Potatoes O' Brien
1 cup 2% shredded sharp cheese
7 1/2 ounces smoked turkey sausage, cut into small pieces
6 large eggs
2 tablespoons skim milk
2 tablespoons Dijon mustard
1 teaspoon Italian seasoning
1 teaspoon garlic powder
Instructions
Preheat oven to 350°F. Spray a small glass baking pan with non-stick cooking spray.
Place the frozen potatoes, followed by the turkey sausage and cheese into the pan.
In a small bowl whisk together the eggs, milk, Dijon mustard, Italian seasoning, garlic powder and salt and pepper.
Bake uncovered for 40 minutes.
