Ingredients
1 10.oz. pre-cooked whole-wheat pizza crust
3 tbsp. low-fat cottage cheese
3 tbsp. low-fat ricotta cheese
1 garlic clove, minced
1 tsp. Italian or pizza seasoning
1 jalapeno
1/4 cup sliced pimento
2 oz. crumbled goat cheese
Instructions
Preheat oven to 450•.
In a small skillet over medium-high heat, cook the jalapeno until slightly blistered on all sides.
Place on a cutting board and thinly slice*
In a small food processor, puree the cottage cheese, ricotta, garlic and seasonings.
Spread evenly onto the pizza crust.
Place jalapeno and pimentos on top.
Sprinkle with goat cheese.
