Summary
These muffin-tin meatloaves prove that good things come in small packages; when that package includes both meatloaf and bacon cheeseburgers, you can be sure that even the picky eaters will go back for seconds.
Ingredients
7 slices bacon, crisply cooked, crumbled
1 lb lean (at least 80%) ground beef
1/2 cup Progresso™ Italian style panko crispy bread crumbs
1/4 cup milk
1 egg
1/4 teaspoon pepper
1/4 cup ketchup
3 slices Cheddar cheese, cut into quarters
Instructions
1 Heat oven to 450°F. Spray 12 regular-size muffin cups with cooking spray. Reserve 1/4 cup bacon for topping.
2 In large bowl, mix remaining bacon, beef, bread crumbs, milk, egg and pepper until well mixed. Divide mixture among muffin cups (about 1/4 cup each), pressing evenly into cups.
3 Bake 13 to 16 minutes or until meat thermometer inserted in center of loaves reads 160°F. Brush loaves with ketchup. Top each meat loaf with 1 quartered cheese slice. Bake 1 to 2 minutes longer or until cheese just melts. Top with reserved bacon.
