  • Heirloom Tomato Cucumber Salad with Peach Vinaigrette

    Ingredients

    3 heirloom tomatoes, sliced

    1/2 of an English cucumber, seeded and sliced into half moons

    1/4 cup fresh basil leaves, use more or less depending on what you like

    Thinly sliced red onion, the amount used is up to you

    Kosher salt and freshly ground black pepper to taste

    1 peach, peeled and diced

    2 tablespoons white balsamic vinegar

    2-3 tablespoons water

    1 tablespoon extra virgin olive oil

    1 tablespoon fresh basil, approximately 4-5 leaves

    Instructions

    Combine all of the ingredients for the vinaigrette in a blender and blend until smooth.
    Pour into a jar or other airtight container and refrigerate until ready to use.
    Arrange the tomatoes, cucumber, red onion and basil on a serving plate.
    Season with kosher salt, black pepper and some of the peach vinaigrette.
    Serve immediately.
