Ingredients
2 large russet potatoes potatoes
1 Tablespoon olive oil
2 Tablespoons salt, divided
2 cups broccoli florets
1 Tablespoon ghee
1/4 cup full fat coconut milk (always blend your coconut milk before cooking with it so it is fully combined)
Instructions
Preheat oven to 350 degrees. Wash potatoes and then take 1 Tablespoon of olive oil and rub lightly over all potatoes. Pierce every potato 4 times with a fork.
