6 boneless, skinless chicken breasts
Jerk seasoning
2 Tablespoons red onion, diced
2 mangoes, diced
2 Tablespoons cilantro, diced
2 Tablespoons lime juice
3 cups cooked rice
Instructions
Season your chicken with jerk seasoning and grill until cooked through.
In a bowl combine the mangoes, red onion, cilantro, and lime juice; mix well.
When the chicken is done cooking, place the salsa over the cooked rice, then put the chicken on top.
