    Easy pumpkin pie cookies made using pumpkin pie mix and real pie crust!

    Ingredients

    Refrigerated pie crust, divided

    1/2 cup Pumpkin Pie Mix

    2 tbs butter, melted

    Cinnamon & Sugar for sprinkle

    Instructions

    Preheat oven to 400 degrees
    Separate the pie crust into two pieces (top and bottom). Roll the crust out into two rectangles at the same size on a floured work surface
    Spread pumpkin pie filling out onto one of the pie crusts
    Place the second pie crust over the first, lightly smoothing it with your hands
    Cut the pie crust into 1/2 inch strips using a pizza cutter
    Grab each end of a strip and twist it as seen in the pictures, then spiral it into a circle cookie shape and place on parchment lined baking sheet, repeat for each strip
    Lightly brush each cookie with melted butter
    Bake for 15 minutes
    Allow the pumpkin pie cookies to cool completely before removing them from the baking sheet.
    Sprinkle with cinnamon and powdered sugar
