Just because you are grain-free doesn’t mean you can’t enjoy a delicious burrito bowl. This Whole30 and Paleo Burrito Bowl is so easy and full of flavor!
Ingredients
2 tbsp coconut oil
2 garlic cloves, minced
4 cups of cauliflower rice
1 lime
1/2 cup fresh cilantro leaves
Salt and pepper (to taste)
1 tsp chili powder
1 tsp cumin
1/2 tsp dried oregano
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
1/2 tsp coriander
1/2 tsp sea salt
1/4 tsp ground black pepper
1 lb chicken thighs or breasts OR ground beef (cut into bite-sized pieces)
1 large onion (sliced)
Shredded romaine lettuce
Salsa of your choice
1 batch of The Best Guacamole Ever (or sliced avocados)
Sliced black olives
Chopped raw onions
Plantain chips
Lime juice
Chopped cilantro (for garnish)
Instructions
Heat coconut oil in a skillet over medium high heat.
Add garlic and cook for 1 minute until fragrant.
Add cauliflower rice and cook stirring for about 5 minutes, until soft and cooked through.
Stir in lime zest, cilantro leaves, salt and pepper, and stir together.
Take off heat and set aside.
