    At some point in the last weeks my friend Maggie and I decided we should do a cooking show together. Basically, she has no idea how to really cook which is a problem as a pro-triathlete. An athlete can have the nutrition information in the world but if they don’t how to execute it in the kitchen, it’s worthless…. And I’m talking more than just a pile of roasted veggies on top of quinoa. That gets old and not yummy. Yesterday was installment number 1. It was completely unscripted, winging it type of day. Maggie didn’t even know what it was we were going to cook. Hell, I’m still trying to figure out how to edit the video! However, the actual cooking, food portion turned out really well! Since there might have been some debate earlier in the week about a roasted chicken being “date worthy” and the fact Maggie has no idea how to roast a chicken… roasted chicken it was! There was a balsamic pasta dish I did last winter when Dwight and I were living in Germany that I really wanted to make with a whole roasted chicken. However, due to our tiny kitchen and fridge, I just made it with some chicken breasts. So, I took this as a PERFECT opportunity to make a winter pasta dish with a whole roasted chicken. Multi-tasking at it’s best The roasted chicken is great, especially since it’s slathered in herbs and olive oil. However, the star of this dish are the cherry tomatoes that are slowly roasted with the chicken. Yes it’s winter and you don’t normally think “oh, tomatoes”. Oh but you should. When they roast, the sugars start to caramelize and get even sweeter. It’s glorious I tell you!!! Want one more final selling point for this winter pasta recipe? It’s all made it one roasting pan. (well besides the obvious you have to boil the water for the pasta). Everything else is done right in the roasting pan. Yay!     • 1 2-3 pound chicken
    • 2 pint containers of cherry tomatoes
    • 2 bunches/containers of basil
    • 10 or so sprigs of thyme
    • 1 head of garlic
    • 1 lemon, cut in half
    • kosher salt
    • 3 tablespoons balsamic vinegar
    • 2 tablespoons olive oil
