- Mint dressing:
- Juice from one large lemon – approximately 1/3 of a cup
- 1 teaspoon of white wine vinegar
- 5 mint leaves + a few more for garnishing
- 1/2 teaspoon of coconut sugar or brown sugar
- 1/4 teaspoon of finely ground sea salt
