    If you are making enough to nibble on later on in the week, omit the tomatoes until just before serving -- a refrigerated tomato is a sad and lonely little thing.

    Ingredients

    • For the Salad:
    • 1 can (about 15 oz.) white beans, any variety, rinsed and drained
    • 3 C. assorted sliced vegetables such as lightly blanched asparagus, green beans or broccoli, or raw veggies like sliced peppers, tomatoes, avocado, cucumber, celery, fennel, or carrots
    • 1 handful fresh herbs (I used Thai basil and cilantro but any basil or mint would work, too)
    • salt and pepper
    • 1 handful hearty greens like radicchio, spinach or kale
    • For the Dressing:
    • 4 Tbs. olive oil
    • 2 Tbs. sherry vinegar (or red wine)
    • ½ tsp. Dijon or favorite mustard
    • 1 tsp. chopped shallot or garlic (optional)
    • pinch each of salt and pepper)
    • For Salad Topping (optional)
    • any of these would be good: pecans, Feta, Parmesan, walnuts, hazelnuts, pistachios, fresh mozzarella bococini, bacon
