    I used canned, though you could cook and puree your own sugar pumpkin. The variation in liquid depends on how thick or thin you want them. Sweet potato also works, of course ???? No arrowroot? Organic cornstarch will suffice. Top the pancakes with coconut cream, maple syrup, and toasted pumpkin seeds (recipe also below)

    Ingredients

    • 1 cup teff flour (or buckwheat flour)
    • ½ cup oat flour
    • 1 Tbsp arrowroot powder
    • 1 tsp baking powder
    • 2 tsp cinnamon
    • ½ tsp nutmeg
    • 1 tsp ground ginger
    • dash of sea salt
    • ½ cup pumpkin puree
    • 1 tsp vanilla extract
    • 1-1½ cup non-dairy milk
    • coconut oil for cooking
    • 1 cup raw pumpkin seeds
    • 1 tsp olive or coconut oil
    • 2 Tbsp maple syrup
    • ½ tsp cinnamon
    • ½ tsp cayenne pepper (optional)
