    Ingredients

    • 4 ounces shiitake mushrooms, destemmed and thinly sliced (1/8 to 1/4-inch thickness)
    • 1 tablespoon olive oil
    • 1/4 teaspoon sea salt
    • Freshly ground black pepper, to taste
    • 1/3 cup plus 2 tablespoons shelled hemp hearts
    • 1/4 cup filtered water
    • 2 tablespoons nutritional yeast
    • 2 tablespoons fresh lemon juice
    • 1 tablespoon apple cider vinegar
    • 1 garlic clove, smashed and peeled
    • 1/2 teaspoon dijon mustard
    • 1/4 teaspoon sea salt or to taste

    • 1 large bunch curly kale, thoroughly washed and destemmed
