    Tuscan crepes are tender, thin pancakes with a creamy ricotta filling and a rich, savory tomato sauce over the top.

    Ingredients

    • (Crepe recipe adapted from America’s Test Kitchen)
    • ½ C. vegetable oil
    • 1 C. all-purpose flour
    • ¼ tsp. salt
    • 1 ½ C. 2% milk
    • 3 eggs
    • 2 Tbs. unsalted butter, melted and cooled
    • 2 Tbs. olive oil
    • ½ C. diced onion
    • 2 cloves garlic, peeled & minced
    • 1 C. dry white wine (can substitute chicken broth)
    • 2 (14.5 oz.) cans diced tomatoes, drained
    • 1 ¼ C. heavy cream
    • ¼ C. capers (packed in brine, drained)
    • 1 tsp. fresh oregano, minced
    • ¼ tsp. kosher salt (or more, to taste)
    • 1/8 tsp. black pepper (or more, to taste)
    • Pinch of crushed red pepper (or more, to taste)
    • 15 oz. part-skim ricotta
    • 8 oz. cream cheese (1/3 less fat Neufchatel)
    • ¾ C. freshly grated Pecorino Romano
    • 4 oz. herbed goat cheese
    • 1 Tbs. fresh parsley, minced
    • 2 tsp. fresh basil, minced
    • 2 eggs, lightly beaten
    • ¼ tsp. kosher salt
    • 1/8 tsp. white pepper
