    • 2 tbsp extra virgin olive oil
    • 6-8 fresh mint leaves, finely sliced
    • 1/3 cup fresh flat-leaf parsley, finely chopped
    • 1/2 tsp sumac
    • feta cheese and black onlives for garnish
