    • One 5-5.5 pound roasting chicken
    • 2 tsp course sea salt
    • 1 tsp ground black pepper (omit for AIP)
    • 2 tsp thyme , divided
    • 1 tsp rosemary
    • 1 lemon , sliced into 3 pieces
    • 1 head of garlic
    • 1 large yellow onion , sliced and cut in half
    • 3-4 parsnips , chopped into larger slices ( I cut each one into 4 pieces)
    • 8 ounces baby bella mushrooms , sliced
    • 6-8 large carrots , chopped into larger slices ( I cut each one into 4 pieces)
    • 2 Tbs olive oil
