    This is my best memory of a simple, surprising soup improvised from a surplus of tomatoes... Keep an open mind and be creative for best results.

    Ingredients

    • 2 cloves garlic
    • ½ large onion
    • 1 stalk of old wilting celery (fresh would be fine too)
    • 500 g (17.6 oz) tomatoes
    • 25 g (0.9 oz) butter
    • 200 g (7 oz) chicken stock
    • 50-100 g (1.8-3.5 oz) cream or milk (not necessary, but nice, will turn your soup orange instead of red)
    • 1 bay leaf
    • spring(s) rosemary - here, use a little or a lot, depending on how you feel about rosemary. If you are not familiar with this pungent herb, use less. It will impart flavour, no matter what. I combined fresh and dried because I had both... just use whatever you have. I used the equivalent of about 4 inches of rosemary stalk.
    • basil (fresh or dried, whatever you have on hand)
    • salt (to taste)
    • Italian olives (optional)
