    A hearty side dish for Thanksgiving but good any time of the year. Tasty combination of sausage, oysters, and mushrooms. Use fresh herbs from the garden if you have them.

    Ingredients

    • 1 pound spicy Italian sausage (ground, not link)
    • ½ stick (1/4-cup) of butter
    • ? cup olive oil
    • 4 celery stalks, diced
    • 1 large onion, diced
    • 1 pound mushrooms, chopped
    • 6 cloves of garlic, finely chopped
    • 2 teaspoon poultry seasoning (or 1 teaspoon sage and 1 teaspoon thyme)
    • 1 Tablespoon Old Bay Seasoning
    • ½ teaspoon red pepper flakes
    • 2 teaspoons Tony's Lite Seasoning
    • 1 jar (8 to 12 ounces) oysters drained, chopped – reserve liquid for later use
