    My recipe is the westernized cheat version of Thai peanut sauce uses peanut butter and simple pantry items to replicate the taste of authentic Thai flavors. It’s simple to make and addictive to eat.

    Ingredients

    • 1 tbsp sesame oil
    • 2-3 cloves of garlic, minced super fine
    • 1 tbsp Red Thai Curry paste
    • 1 cup lite coconut milk
    • 3/4 cup creamy, natural peanut butter
    • 2 tbsp soy sauce (use gluten free for GF)
    • 2-4 tbsp light brown sugar (depending on your preferred sweetness)
    • 1/2-1 tsp cayenne pepper powder ( or 1-2 tsp of chili paste) [depending if you like a sweet sauce with a little bit of a heat in the after-taste]
    • 2 tbsp apple cider vinegar
    • 1/2 tsp salt
    • Juice of 1/2-1 lime
    • Water or extra coconut milk (to thin the sauce out to the consistency of your liking).
    • Crushed roasted peanuts (for garnish)
