    • 2 chicken breasts, sliced into thin strips
    • juice of 1 lemon
    • 1 tablespoon olive oil
    • 2 teaspoons dried minced onion
    • 3 cloves garlic, minced
    • 1½ tablespoons sriracha (or another garlic chili paste)
    • ½ teaspoon salt
    • ¼ teaspoon ground black pepper
    • 2 bell peppers (any color), sliced into thin strips
    • 1 onion, sliced thinly
    • 4-5 6 inch flour tortillas
    • lime wedges (for garnish - I think that squeezing a little lime juice over the fajitas really brightens them up)
    • ? cup + 2 tablespoons olive oil (or vegetable/canola oil)
    • 2 cups long grain white rice (like Jasmine rice), uncooked
    • 5 cloves garlic, minced
    • 14.5 ounces low-sodium diced tomatoes
    • 1 red bell pepper, roughly chopped
    • 1 onion, roughly chopped
    • 1 tablespoon chili powder
    • 3 chipotle chilies in adobo sauce
    • 2 cups low-sodium vegetable broth
    • salt, to taste
    • lime wedges (optional - again, I like a bit of lime juice squeezed over the rice for some acidity)
