Ingredients
- 12 ounces cavatappi pasta or your favorite shaped pasta
- 1 14 ounce can black beans, drained and rinsed
- 1 cup corn, fresh or thawed frozen
- 1 cup chopped pepper, poblano, serrano or bell depending on how much heat you like
- 1 cup chopped red bell pepper
- 1/3 cup chopped red onion
- 1 fresh avocado, cubed
- 1/2 cup crumbled cotija or feta cheese
- 1 large tomato, cubed
- 2 tablespoons dijon mustard
- 1 clove garlic
- 1/4 cup apple cider vinegar white will work in a pinch
- 3/4 cup extra light olive oil
- 2 teaspoons dried oregano or 1-2 tablespoons fresh
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
