Ingredients
- 1.5-2 lb boneless skinless chicken thighs

- One large onion
- Two large carrots
- 1 cups sugar snap peas
- One red bell pepper
- 3 Tablespoons olive oil, or cooking oil of choice
- 1/2 tsp salt + 1/2 tsp salt
- 1/2 tsp granulated garlic
- 1/4 tsp pepper + 1/4 tsp pepper
- 1/2 cup Soy sauce, OR gluten-free Tamari, OR Coconut-aminos for soy-free/gluten-free
- 2 minced garlic cloves
- 1/2 inch nub of ginger, peeled and minced (about 1 Tablespoon)
- 1/4 cup plus 1 Tablespoon coconut sugar (add another tablespoon if you like things very sweet. I like it pretty salty.)
- 1 Tablespoon corn starch
- 1/4 cup very warm water
