    Karen’s conversions for TWO loaves (since the whole recipe is in grams): Levain: 1/4 cup (31g) ripe WW sourdough starter 3/4 cup (110 g) WW flour 1/2 cup (just a touch less) water (110g) Dough: ~2 cups (250g) levain (full amount after overnight rest for me) 6 1/2 cups (800g) white bread flour (I used APF) 1 2/3 cup (200g) WWF 1.11 Tbl (or 3.33 tsp) (20g) salt 3.1 cups (730g) and just under 1/2 cup (50g) water 3 cups olives 2 tsp Italian herbs **LEFT OUT THE LEMON ZEST**

    Ingredients

    • For ONE loaf:
    • 125g (25%) leaven
    • 400g (80%) white bread flour
    • 100g (20%) whole wheat bread flour
    • 10g (2%) salt (or 1 1/2 tsp)
    • 365g water and 25g H2O in reserve for after you add the salt (step #5 in Method below)
    • 1 1/2 cups pitted olives (I did 2 cups kalamata and 1 cup green), loosely chopped
    • 1 tsp herbs de Provence
