    Ingredients

    • 1 sweet potato, sliced into 1/2 rounds
    • 1.5 tsp avocado oil
    • 2-3 cups cooked brown rice
    • 1 cup frozen shelled edamame, thawed
    • 1 large carrot, grated
    • 1/2 cup bean sprouts
    • 1 tbsp sesame seeds
    • 1 cup tahini sauce
    • 2 garlic cloves, minced
    • 1 small lemon
    • 1.5 tsp Himalayan pink salt
    • 1.5 tbsp Spicy Sesame Seed Oil (sub regular olive oil for less spice)
    • A splash of water
