    Chunky Gazpacho Soup is my favorite summertime soup! It's loaded with corn, bell peppers and cucumbers and with a dollop of sour cream it's the perfect soup for a hot day!

    Ingredients

    • 2 large Tomatoes, diced
    • 2 Bell Peppers, any color, diced
    • 1 English Cucumber, seeded and diced
    • 1 Corn, kernels only, cooked
    • 1/2 Red Onion, diced
    • 1 Garlic Clove, minced
    • Small Bunch Basil, chopped
    • Small Bunch Green Onions, chopped
    • 4 cups Tomato Juice
    • 4 tablespoons red wine vinegar
    • 2 tablespoons Olive Oil
    • Salt and Pepper to taste
    • Sour Cream, to serve
