    • 2 tablespoons olive oil
    • 1 yellow onion, minced
    • 3 stalks celery, finely chopped

    • 2 cloves of garlic, finely minced
    • ¼ teaspoon kosher salt
    • finely chopped red pepper or scallions, for garnish (optional)
