    • 3 small Yukon Gold potatoes, sliced crosswise into 1/4-inch-thick rounds
    • 2 medium tomatoes, quartered
    • 1/2 cup tomato paste
    • 4 cups homemade or store-bought low-sodium chicken stock
    • 1 teaspoon sugar
    • 2 racks of lamb, frenched
