    This dish is best enjoyed with rice and chapatti. I sometimes tend to have it plain as a stand alone dish. The stuffing will give the aubergine a mellow yummy flavoure and I have to warn you its addictive!

    Ingredients

    • 4 small Aubergine (preferably long)
    • 1 medium Onion - quartered, sliced
    • 1 Teaspoon Mustard seeds
    • 1 cup Water
    • ½ cup grated Coconut
    • 3 Tbs crushed and chopped Cashew nuts
    • ½ Teaspoon Turmeric powder
    • ¼ Teaspoon Chilli powder
    • pinch salt
    • pinch white pepper
    • pinch cinnamon powder
    • pinch clove powder
    • 1 Teaspoon garlic paste
    • 1½ Tablespoon jaggery
    • 1 Teaspoon Tamarind pulp
    • Coriander
