    • ¼ Cup Mint
    • 1 Serrano Pepper (– thinly sliced)
    • ½ medium Red Onion (– thinly sliced)
    • 4 medium Green Onions (– sliced)
    • ¾ Cup Cashews (,or 1/3 cup roasted pumpkin seeds)
    • 1 Lime (– cut into wedges)
    • 1 TBS Vegetable Oil (plus more for squash)
    • 3 Cloves Garlic (– minced)
    • 1 Small Serrano Pepper (– seeded and minced (can substitute 1 tsp Crushed Red Pepper Flakes))
    • 2 tsp Fresh Ginger (– peeled and grated (about one ½’’ piece))
    • 3 TBS Fish Sauce
    • 2 TBS Light Brown Sugar
    • 1 tsp Rice Vinegar
    • ½ Cup Coconut Milk
    • 3 TBS Lime Juice
