    This soup freezes and reheats well. The recipe is also easy to double if you are feeding a crowd or want extras for another meal. Add as many vegetables as you think you can sneak past the children. To make a vegetarian version, omit the bacon and use vegetable stock in place of the chicken stock.

    • 1 carrot chopped
    • 1 large celery stick chopped
    • 1 L chicken stock
    • 400 g tin plum tomatoes
    • 400 g tin cannellini beans drained and rinsed
    • 3 handfuls of pasta
    • 1 bay leaf
    • Salt & Pepper
    • Grated Parmesan and bread to serve
