    This southwest stuffed spaghetti squash is absolutely fantastic. Filled with southwest flavours and so quick and easy to make!

    Ingredients

    • 1 medium spaghetti squash
    • 3 Italian sausages (about 11 ounces or 300 g), casings removed
    • 1 small onion, chopped (about 1/2 cup)
    • 1 cup frozen corn
    • 1 red pepper, chopped (about 1/2 cup)
    • 2 teaspoons chili powder
    • 1 teaspoon cumin
    • 1 teaspoon coriander
    • 1/4 cup sliced black olives
    • 2 cups fresh spinach, roughly chopped
    • 1 cup salsa
    • 1 1/2 to 2 cups grated cheese (I used a mix of sharp cheddar and Monterey Jack)
