  • Ingredients

    • 1-2 tablespoons coconut oil (or choice of fat)
    • 1 lb. boneless skinless chicken breasts, cut into bite-sized chunks (approximately 2 good-sized breasts should work)
    • onion powder
    • garlic powder
    • cumin
    • coriander
    • paprika
    • sea salt
    • black pepper
    • 3/4 cup coconut milk from a 14.5 oz. can of well-stirred, full-fat coconut milk (reserve remainder for other use)
    • 1/4 cup coconut aminos (or tamari)
    • 1/4 cup apple cider vinegar
    • 1/4 cup pure maple syrup
    • 1 large yellow onion, sliced thinly (or combination of 1/2 red and 1/2 yellow like in the photo)
    • 3 garlic cloves, minced
    • 6 assorted sweet mini peppers, sliced thinly into strips (or use 2 medium bell peppers, preferably red or orange)
    • 1- or 2-inch piece of ginger, peeled and cut into matchsticks (use 2 inches if you like ginger like I do!)
