    Slow Cooker Chipotle Beef Chili is a low maintenance meal that is perfect for cold days, watching sports or lunches during the week. The chipotle chili powder mixed with spicy jalapeños make this an extra flavorful chili. This meal is freezer friendly so make extra and save some for later.

    Ingredients

    • 1 lb. ground beef, cooked, fat drained
    • 1-15.5 oz can of corn, drained and rinsed
    • 1-15.5 oz can of dark red kidney beans, drained and rinsed
    • 1-15.5 oz can of black beans, drained and rinsed
    • 1-15.5 oz can of cannelini beans, drained and rinsed
    • 2-14.5 oz cans of diced tomatoes
    • 1/2 sweet onion, chopped
    • 2 garlic cloves, minced
    • 1 green pepper, chopped
    • 2 jalapeño, seeds removed, chopped {optional for spice}
    • 1 carrot, peeled and chopped
    • 2 Tablespoon chili powder
    • 1/2 teaspoon chipotle chili powder {more depending on the amount of chipotle flavor you want}
    • 1 teaspoon dried oregano
    • 1/2 teaspoon red pepper
    • 2 teaspoon cumin
    • 1/2 teaspoon paprika
    • Salt and pepper to taste
    • Garnish:
    • Fresh cilantro, chopped
    • Cheese
    • Sour cream or greek yogurt
    • Green onions, chopped
    • Fresh jalapeños, chopped
    • Avocado
    • Red onion, chopped
