    A holiday favorite in our home! This recipe makes its way to our table each year and is always a huge hit with our family and guests!

    Ingredients

    • 4.5 lbs Beef Round Top Round Roast
    • 1/4 tsp sea salt
    • 1/4 tsp black pepper
    • 1 tsp olive oil
    • 2 cups baby carrots (1 bag)
    • 1 lb frozen pearl onions
    • 3 cloves garlic, minced
    • 1/2 tsp thyme
    • 1 cup dry red wine (I go with whatever is on hand that I enjoy, Cabernet, Merlot or Shiraz)
    • 1 (28oz) can diced tomatoes, drained
    • Flat leaf parsley, for garnish
