    Skinny Beef Stroganoff Recipe- Fast, easy to make, beef stroganoff, that is family friendly and cuts down on calories by using yogurt instead of cream or sour cream. Added peas and spinach make this beef stroganoff THE BEST!

    Ingredients

    • 2 pounds sirloin steak (trimmed and thinly sliced across the grain)
    • 3 tablespoons flour (divided)
    • 2 tablespoons extra virgin olive oil
    • 1/2 cup sherry or other cooking wine
    • 1 cup white onion (chopped)
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon fine sea salt
    • 1/4 teaspoon hot paprika
    • 2 cups mushrooms
    • 1 1/2 cups beef broth
    • 1/3 cup plain Greek yogurt
    • 3 tablespoons scallions (sliced diagonally)
    • 1 tablespoon butter
    • 1 cup frozen peas
    • 1 cup fresh spinach
    • 4 cups egg noodles (cooked and lightly buttered (to prevent sticking))
    • 2 tablespoons flat leaf parsley (roughly chopped)
