    Savoring these last few weeks of summer with my shrimp tacos with kiwi salsa. These delicious shrimp tacos are easy to make and have all the best summer flavors. Recipe makes 10 to 12 tacos.

    Ingredients

    • 12 corn tortillas
    • Shrimp:
    • 1 lb shelled, deveined, uncooked medium shrimp
    • 1 +2 Tbsp extra virgin olive oil
    • ½ tsp garlic powder
    • ½ tsp cumin
    • ½ tsp chili powder
    • ½ tsp onion powder
    • Salsa:
    • 1 Kiwifruit
    • ¼ of a large red onion chopped
    • 1 Jalapeno (1/2 if you do not like too much spice)
    • juice from ½ of a lime (save other half for slaw)
    • ¼ cup coarsely chopped cilantro
    • Kiwi Slaw:
    • ½ red cabbage coarsely chopped
    • ¼ c extra virgin olive oil
    • 1 kiwifruit
    • Juice from ½ of a lime
    • 1 tsp minced garlic
    • 1 tsp honey
