    We used buckwheat flour to make the crust for this roasted red pepper and chorizo tart. It is filled with a spicy chorizo and roasted red pepper veggie mix and a creamy filling of ricotta and cream cheese. It is topped with shredded parmesan cheese and decorated with roasted red pepper slices.

    Ingredients

    • 1 1/2 cups buckwheat flour 180g
    • 2 tablespoons corn starch
    • 1 stick unsalted butter, cubed and chilled
    • 1 tablespoon finely chopped fresh thyme
    • 1 tablespoon finely chopped fresh rosemary
    • 2 ounces parmesan cheese, freshly grated
    • 1 egg lightly beaten
    • 1/4 cup water
    • 3 red bell peppers
    • 2 tablespoons olive oil
    • 8 ounces bulk chorizo sausage
    • 1/2 cup finely chopped onion
    • 2 garlic cloves, finely chopped
    • 4 large eggs
    • 1/2 teaspoon sea salt
    • 1/8 teaspoon freshly ground white pepper
    • 8 ounces low-fat cream cheese
    • 8 ounces low-fat ricotta cheese
    • 1/4 cup milk
