    Healthy Roast Turkey and Cranberry Stuffed Baked Sweet Potatoes. A perfect way to use up Thanksgiving leftovers.

    Ingredients

    • 3 large sweet potatoes
    • 2 Lbs leftover Turkey from Thanksgiving OR
    • For the Turkey:
    • 2 lb turkey breast ( bone in, skin on)
    • 1 tsp sea salt
    • ½ tsp ground black pepper
    • ½ tsp garlic powder
    • ½ tsp onion powder
    • 1 tsp dried basil
    • 2 Tbsp lemon juice
    • 1 cup chicken broth
    • ½ cup water
    • Leftover Cranberry Sauce from Thanksgiving OR
    • For the Cranberry Sauce:
    • 3 cups fresh or frozen cranberries
    • Zest and juice of one large navel orange with water added to the juice to make 1 c total
    • ? c pure maple syrup
    • 1 tsp cinnamon
    • ¼ tsp salt
    • 1/ c water
    • ? c pecans, chopped
