    Adapted from Eat Live Run's Mushroom Risotto Recipe

    Ingredients

    • 1 Tbs olive oil
    • 1 cup quinoa (rinsed)
    • 1 shallot , minced
    • 3 cloves garlic , minced
    • 2 3/4 cups chicken stock (all natural chicken stock, make sure there is no sugar in the ingredient list), you can also use vegetable stock or beef stock
    • 1/4 cup canned coconut milk ( I like Golden Star coconut milk and Savoy coconut cream because both brands are preservative-free)
    • 1/2 cup grated goat cheddar or parmesan cheese (I like Montchevré goat cheddar) [note: the cheese here can be optional to keep the dish dairy-free]
    • 16 ounces baby bella mushrooms
    • 1/2 tsp salt
    • 1/4 tsp pepper
    • 1/8 tsp nutmeg
    • 1/4 tsp rosemary
