    You can make this into a vegetarian dish by omitting the bacon, and adding 1 teaspoon of smoked paprika to the sauteed vegetable. Replace the chicken stock with vegetable stock. This soup will thicken on standing, and may need a splash of water or stock to thin it out prior to serving.
