    Filling, comforting and so simple to make, this red lentil soup makes a great healthy lunch or dinner without you having to invest too much time and effort.

    Ingredients

    • 3 medium red onions (yellow will also work)
    • 3 tablespoons (45 ml) olive or coconut oil (omit if you’d like to keep the soup oil-free, a non-stick pan will work best in that case)
    • 5 to 6 cups (1.2 - 1.44 l) vegetable broth (depends on the thickness you want to achieve, 5 cups gives you very thick soup)
    • 1 teaspoon thyme (you can also experiment with other herbs if you like, parsley or oregano work great for instance)
    • 2 cups (400 g) dry red lentils
    • ½ teaspoon garlic powder or 3 minced cloves fresh garlic
    • salt & pepper to taste (you might not need much salt if your broth is salty already)
    • optional: 1 tablespoon balsamic vinegar (I like to add this because it add an interesting layer of somewhat fresh, fruity flavor but feel free to omit if you prefer)
