- 1 bell pepper, chopped (1 cup)
- 4 stalks celery, chopped (1 cup)
- 3 cloves garlic, minced
- 2 bay leaves
- ½ teaspoon cayenne pepper
- 1 teaspoon dried thyme
- 1 tablespoon dried parsley
- 1 teaspoon Cajun seasoning
- ¼ teaspoon black pepper
- ¼ teaspoon dried sage (optional)
- 1 pound of cooked smoked or andouille sausage, sliced or chopped into bite sized pieces.
