    • 4-5 tomatoes, sliced (Roma or vine ripened)
    • 1 red bell pepper, deseeded & cored
    • 1 cup filtered water
    • 1/4 cup raw cashews, soaked in water 2-4 hours (*see note)
    • 2 tablespoons olive oil
    • 1-2 fresh basil sprigs
    • 1/2 teaspoon sea salt. More, to taste
    • 1 small garlic clove
    • 1 teaspoon fresh lemon juice
