    Put this in the oven and then close your eyes; you could fool yourself thinking you've fallen into the Provencal vacation of your dreams.

    Ingredients

    • 1 whole chicken, about 4-5 lbs.
    • 4 garlic cloves, cut into slivers
    • 1 regular or Meyer lemon
    • 2 Tbs. ground fennel or anise
    • salt and pepper
    • 3 oz. Pastis (or other anise liqueur)
    • 2 oz. olive oil + more for drizzling
    • 1 cup white wine
    • 1 14 oz. can of chicken stock (or roughly 1½ C. homemade)
    • 2 heads fennel, trimmed and cut into large pieces
    • 2 pounds potatoes, cut in large pieces, or if using smaller, halved
    • 1 bunch green onion, cut into rings
    • chopped fresh tarragon (optional)
