Pumpkin Spiced Chocolate Chip Spelt Pancakes

  • Ingredients

    • 1 1/2 cups almond milk
    • 1 cup pumpkin
    • 1 flax egg (You can also use real eggs if you eat them)
    • 2 T coconut oil
    • 2 cups spelt flour (for a gluten free version use GF flour and add an extra egg)
    • 1 T maple syrup
    • 2 tsp baking powder
    • 1 tsp baking soda
    • 1 tsp cinnamon
    • 1/2 tsp ginger
    • 1/2 tsp nutmeg
    • 1/4 tsp ground cloves
    • 1 tsp vanilla ( I used ground vanilla bean , but vanilla extract would be fine.  Just make sure that it is pure and not imitation.)
    • 1/2 tsp salt
    • 1/4 cup chocolate chips ( I used carob chips)
