    Try these lovely baked pumpkin doughnuts. They have a wonderful texture and terrific flavor. Topped with caramel icing and toasted chopped pecans - they are easy to make but hard to stop eating! Recipe adapted from King Arthur Flour

    Ingredients

    • ½ cup canola oil
    • 3 large eggs
    • 1½ cups granulated sugar
    • 1½ cups canned pumpkin or pumpkin puree
    • 1 teaspoon ground cinnamon
    • ¼ teaspoon ground ginger
    • ¼ teaspoon ground nutmeg
    • 1½ teaspoons salt
    • 1½ teaspoons baking powder
    • 1¾ cups + 2 tablespoons unbleached all-purpose flour
