There is something comforting about the combination of the creamy mozzarella, the pepper profile of the arugula, tartness of the tomato and saltiness of the prosciutto that makes this a go to for panini’s, pizza’s and even pastas. This is a quick sandwich to put together after a long bike ride or long run. Enjoy! Prosciutto, Tomato, Mozzarella & Arugula Panini Prep time5mins Cook time10mins Total time15minsServes2 Ingredients Print Recipe Save Recipe 4 slices of sourdough bread 3 ounces mozzarella 2 ounces prosciutto 4 thin tomato slices 1 stuffed cup of arugula Basil 1 tablespoon olive oil or butter Instructions Assemble the sandwiches, making sure you have mozzarella on both sides of the bread. Lightly oil or butter each side of the bread. Heat a panini press or griddle to medium heat. Press the sandwich for 5-7 minutes if using a panini press.
