    • 6 tbsp fresh coriander, leaves and finely chopped stalks

    • 2 tbsp tomato purée
    • 125g yellow lentils, washed and drained
    • 600ml vegetable stock
    • 900g floury potatoes, peeled and cubed
    • fresh coriander leaves, to serve
