    These personal "pizzas" make a great appetizer or snack. Be sure to serve them with plenty of napkins because they can get messy!

    Ingredients

    • 4 large portobello mushrooms
    • balsamic vinegar
    • salt and black pepper
    • 4 tablespoons oil-free pasta sauce (such as 365 Organic)
    • 1 clove garlic , minced
    • 3 ounces zucchini , shredded, chopped, or julienned (about 1/2 medium)
    • 2 tablespoons sweet red pepper , diced
    • 4 olives kalamata olives , sliced
    • 1 teaspoon dried basil
    • 1/2 cups hummus (see notes for Kalamata version)
    • fresh basil leaves or other herbs , minced
